Menu Plan Monday


Sunday: Shephard's pie (with ground lamb) inspired by the chick n' coop 's recent post
Monday: KFC for Papa's 80th  birthday (recently got coupons in the mail so this is a treat)
Tuesday: chili mac (with short spaghetti noodles from Safeway)
Wednesday: Grilled Salmon with Peach and Pineapple Salsa and Balsamic reduction (another Safeway inspired dinner)
Thursday: Stew (Beef and Vegetable most likely)
Friday: Casserole (probably Tator Tot Cassresole since I still have ground beef in the freezer)

Yes I know it is Sunday but I have a busy week so I figured I would post the menu for the week sooner rather than later.

On a side note this week's menu was inspired by my recent visit to the Safeway Regional office in Clackamas as part of their launch of the just for u program. 4 of the menu items for this week were either purchased or received from Safeway during the Blogger event I attended.  Stay turned for my write up on the Safeway launch.

Menu Monday April 9th



This week is full of life so I hope to keep the menu simple.
Monday: Chili Mac
Tuesday Chicken Salad
Wednesday: Pizza
Thursday: BBQ burgers
Friday: soup
Saturday: Don't have a clue.

Monday Menu Plan April 2nd- April 7th

Monday:  Chili Mac ( super easy meal that my boys can make)

Tuesday:  Chicken Salad (not sure if it will be on sandwiches or on lettuce)

Wednesday:  Pizza  (Papa Murphy’s most likely as Wednesdays are our co-op day and take it out of both Mommy and Daddy)

Thursday:  Roasted turkey dinner  (I scored an extra turkey after the holidays and have been saving it for a mid week surprise)

Friday: BBQ burgers (hopefully the weather will improves little)

Saturday:  I don’t have a clue!  (hey honesty is a good policy)

I am thankful for the weekly link up to keep me on track with my menu plans.

Menu Monday


As I recover use of my arm and begin retraining the muscles in my shoulder and arm I am continual looking for easy menus. This coming week is our first week back to homeschool co-op following Spring Break so I have a couple extra things on the calendar this week meaning it will be super easy meals this week.
Monday: Annie’s Organic Rising Crust Pizza
Tuesday: Chili Mac
Wednesday: BBQ burgers and tator tots
Thursday: Soup and sandwiches
Friday: black bean chicken burritos
One way to keep Mommy on the mend is to make it easier to fix dinner.

Menu Monday a little late




So I haven't done a Menu Monday post for a while. Actually, I haven't used the weekly menu board in a couple of weeks. This week though Mike has a customer coming up from California to work on a car project with him, so I needed to make a menu so I could do some filler grocery shopping. I try to fix lunches and dinners that this particular customer likes. If you are working at the shop (ie My house) then you are going to get fed.
So this week:

Dinner
Wednesday   Red beans and rice with peppers and beef smoked sausage.
Thursday   Stuffed bell peppers (freezer meal from the Zaycon Ground Beef order)
Friday   Squash ravioli with cream sauce


Lunch

Thursday   Tuna and shells and peas
Friday   Homemade Mac & Cheese

As you can see, I'm still using the wipe off board. I need to finish my Menu Board, but have been busy with homeschool

Menu Plan Monday #blogboost

I am actually a day ahead but wanted to share our Menu plan for the week:

Sunday: Souper Sunday (in other words the left over soup in the fridge! Both are home made soups from the past week that everyone liked.)

Monday: Chili Mac (I was able to find Nalley's Chili on sale for $.86 a can so I stocked up last week)
Recipe:
2 cans of chili
1 1/2 cups dry macaroni
1 cup of cheese
chopped onions (optional) 

Directions:
Cook Macaroni Noodles as directed
drain and rinse
add the 2 cans of chili and return to heat. Heat on medium until Chili is heated thoroughly
serve in bowls topped with cheese and onions.

Tuesday: Salsa Chicken (recipe to follow)
Wednesday:  Meatballs and rice with cream of mushroom soup
Thursday: Tuna Noodle Casserole (Super Simple Supper)
