Review, Recipe, and Giveaway
Thought I would share today's lunch recipe along with a review of a wonderful product and a giveaway. You'll have to read the whole blog for the giveaway.
Turkey and Rice Lunch
1/2 cup uncooked rice (I use a blend of basmati brown rice and jasmin white rice)
8-10 stands thin spaghetti noodles broken into pieces
1 Tbsp Herbie or G.O.H mix
1 cup Chicken broth
1/2 cup frozen corn
1/2 cup frozen peas
1 cup diced turkey or chicken
1 Tbsp butter
In medium sauce pan combine butter , spaghetti and rice. melt butter and lightly brown noodles and rice. Add Herbie ( or GOH mix) and chicken broth. Cover and simmer until rice is tender (usually 20 minutes) Add veggies and meat cover and cook for approx 10 minutes on medium low heat.
Serve warm
Can add Parmesan cheese as a garnish
Feeds 2-3
If I am making this for the whole family I double the recipe and serve for dinner with sourdough bread and salad. Today it was lunch for husband and me.
Herbie ETC. is a small company started when I was young. Herbie the original seasoning was used for popcorn topping and general seasoning. The entire line of seasoning is low sodium (less than 3%) and is incredibly veristile . Today's recipe featured original Herbie. We are giving away a small bag of original Herbie along with a larger bag of the Deli Herbie (great for potato salad seasoning, roast, veggies, etc.)

Review: Little Looster
The Little Looster was created by Monica Mylet a mom of 3. This fun horse shoe shaped stool wraps around the toilet instead of just sitting in front of it. We received one to review and have been using it for a couple of weeks now. We started out with it in the boys' bathroom and found the space where the toilet is was too crowded for it so I moved it into my bathroom and it works better (our toilet is not standard so it doesn't slide as close as it could).. It has helped with Nathan sitting down and feeling secure enough to let go of the toilet seat.. Since my boys are older I wasn't sure how it would work. Cameron hates the idea of a stool in the bathroom but puts up with it... I do like the cut outs that make it possible for an adult to stand in front of the toilet if need be. It is also light weight enough that it can be moved out of the way for a grown up to sit down. The graphics that are stamped on the step part make it a little more fun (counting the L's) and the plain white plastic is super easy to clean up in case of messes.
I love mom created products and seeing the story behind the Looster on Monica's website was great and to find out and read the Oregon connection makes the whole thing that much better.

I would definitely recommend this product to a potty training family. I have to say a special Thank you to Monica for sending the package to Nathan (the boys don't get a lot of mail) making this product something that was special just for him. I love finding Mommy Companies, especially ones that support my local economy (Oregon)
Little Loosters sell for $34.99 online. Considering what is out there and what this product does I feel the price is well with-in reason and a good overall investment in the Mommy sanity

Spring Time in Unionvale
Spring has finally come to Unionvale. Nathan decided to hang out by the pond with Daddy mowed the lawn. I couldn't help but take some pictures until I got caught. The late afternoon/evening lighting is so much nicer, but the boys are usually on their own missions and not very receptive to photos.. This time I was lucky.

New Blog Design
I am so happy with my new blog design. Danielle at Ms.Danielle Designs did an amazing job taking the few notes I gave her and creating this fun design. The colors are warm and homey, the elements are crafty and fun, and the headings and buttons are easy to use.
If you are new to my blog check out the before and after photos over at Danielle's blog... It was amazing!! (Don't get me wrong there is nothing wrong with the blogger provided designs I just needed something more me.)

Quick Recipe to share
Just thought I would share a quick and easy spring meal I made the other night.
Roasted chicken, Baked Potatoes, and Green Beans.
3 frozen or fresh boneless skinless chicken breasts
4 to 6 peels whole garlic cloves (1 or 2 if you are using elephant garlic)
Olive Oil
Herbs de Province
Sea Salt (optional)
1 russet Potato per person
1/2 lb to 1 lb frozen whole organic Green Beans
Pre heat oven to 400'
arrange chicken in baking pan place garlic in pan.
litghtly dizzle olive oil over garlic and chicken
sprinkle herb de province seasoning generously over chicken
lightly salt.
Place pan of chicken in oven to bake.
Place washed Russet Potatoes in oven surrounding pan
Bake until chicken is done (frozen took approx 1 hour)
Potatoes should be done in that time, if not finish them up in the microwave (I know cheating but it still works).
For Green Beans I simply place them in a small cook pan with a little water and a sprinkling of salt. Cover and Cook on Medium until hot (not mushy though)
Wish I had taken a picture to go with it... This was Saturday nights dinner. It was easy in the oven and we could continue our activities.
p.s. the new signature is a glimpse of the upcoming new design..
